Ingredients:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup ground flaxseed
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 tablespoon honey or maple syrup optional
- 1/4 cup dark chocolate chips optional
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine the mashed bananas, rolled oats, ground flaxseed, cinnamon, and vanilla extract
If desired, add honey or maple syrup for sweetness and dark chocolate chips for extra flavor
Mix all the ingredients until well combined into a sticky dough
Scoop spoonfuls of the dough onto the prepared baking sheet, shaping them into cookie rounds and flattening slightly
Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown around the edges
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
