Vegan Almond Joy Bars



These Vegan Almond Joy Bars are a delightful treat for those craving a dairy-free version of the classic candy bar. With layers of coconut, almond butter, and chocolate, they offer a perfect balance of flavors and textures.

Ingredients:

  • 2 cups shredded coconut
  • 1/2 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup almond butter
  • 1/2 cup chopped almonds
  • 1/2 cup dairy-free chocolate chips
  • 1/4 cup almond slices for topping

Instructions:

In a mixing bowl, combine shredded coconut, melted coconut oil, and maple syrup

Spread half of the mixture evenly into a lined baking dish, pressing down firmly to form the base

Place in the freezer for 10 minutes to set

In a small saucepan, melt almond butter over low heat until smooth

Remove the baking dish from the freezer and spread the melted almond butter evenly over the coconut base

Sprinkle chopped almonds on top of the almond butter layer

Gently press down the remaining coconut mixture over the almond butter and almonds

Return to the freezer for another 10 minutes to set

In the meantime, melt dairy-free chocolate chips in a double boiler or microwave

Once the coconut layers are set, pour melted chocolate over the top layer and spread evenly

Sprinkle almond slices on top of the melted chocolate

Return to the freezer for a final 15-20 minutes until completely set

Once set, remove from the freezer and let it sit for a few minutes before cutting into bars
